We’re big smoothie fans here at the Ramparts. It’s been awhile since I shared a recipe, so yesterday I put on my thinking cap and came up with the Apple Pie Green Smoothie. It’s a green smoothie because it has spinach in it. So, it’s a good way to squeeze a few more veggies into your day (and honest, you totally can’t taste the spinach). I usually don’t put dairy in my smoothies; but since I wanted this Apple Pie Smoothie to be a bit richer, I added it in. And we had two large containers of Greek yogurt that we have to use up soon.
Here we go!
Apple Pie Green Smoothie
INGREDIENTS:
1/2 large apple, cut into chunks
1 ripe banana, frozen and cut into chunks
1 c. spinach
1/2 c. cold water
1/2 c. vanilla flavored Greek yogurt
1 tbsp. graham cracker crumbs
1 tsp. vanilla extract
1/2 tsp. ground cinnamon
Directions:
1. Combine first four ingredients in blender. Blend until smooth.
2. Add remaining ingredients. Blend again until smooth.
3. Enjoy!
Substitutions:
You could easily make this a vegan smoothie! Just leave out the 1/2 cup cold water, and replace the yogurt with a 1/2 cup of almond milk.
I used a Fuji apple, but you could use any variety (a Honeycrisp would be AMAZING). I like to use frozen banana, because it gives the smoothie an icy, milkshake-like texture…but you could use a fresh banana. Do whatever floats your boat, basically.
